Being accustomed to the Hershey variety of chocolate (not that there’s anything wrong with that), I was surprised to discover the many complexities of gourmet chocolate, in particular the dark varieties, with its many tiered notes. Each chocolatier blends their creations with layers that hint of veggies, herbs, wine, and much more as they make each batch. Many are also artists who sculpt chocolate. I particularly enjoyed Michel Chaudun’s chocolate staircase with a lost shoe, and Patrick Roger’s orangutan.
